Two Texas-born restaurant concepts are set to join Salt Lake City’s Silo Park development, bringing a mix of food, music and bowling to the Granary District. Free Range Concepts has partnered with Blaser Ventures and Lowe Property Group to open The Rustic and Bowl & Barrel in the project, with both venues planned for summer 2027.
The move adds an entertainment-focused layer to one of the city’s newest major developments. The two restaurants will sit within a block bordered by 400 West and 500 West, and by 500 South and 600 South, where they are expected to serve as an anchor for the larger mixed-use project.
What is coming to Silo Park
The Rustic started in Dallas a little more than a decade ago and built its identity around American comfort food, live music and a stage that hosts both local and touring acts. The concept has featured performers including Kane Brown, Sheryl Crow, Tyler Childers and Ella Langley, giving it a profile that blends dining with a concert experience.
Bowl & Barrel launched in Dallas in 2012 and combines bowling with a food menu centered on pizza and appetizers. It later expanded to Houston, while a San Antonio location closed last year, and the Salt Lake City site appears set to become the brand’s first outside Texas.
Why the Granary District matters
The deal reflects continued momentum in the Granary District, where redevelopment has accelerated around new housing, retail and public spaces. Brandon Blaser, founder of Blaser Ventures, said in a statement that “the Granary District has become one of the most exciting and authentic neighborhoods in Salt Lake City,” and described the two concepts as the kind of experiential businesses that fit that growth.
Kyle Noonan, co-founder of Free Range Concepts, said the team is eager to join the project and that the neighborhood’s “authenticity, energy and sense of community” align with the brands. That positioning matters because Silo Park is being built not just as a residential project, but as a destination with entertainment and gathering spaces built into its plan.
A larger mixed-use project with historic ties
Silo Park is planned to include more than 700 housing units, 100,000 square feet of retail and 16,000 square feet of community park space near the historic silos on the former industrial site. The development is also designed to reflect the area’s industrial past while creating new public spaces that draw people in.
City leaders are still considering a request for a public infrastructure district to help finance water and sewer lines, an interior park and parking structures within the project area. The development sits inside the Salt Lake Central Housing and Transit Reinvestment Zone, where tax increments can be used to support new construction south and west of downtown.
The project is also next to the Post District, another Blaser Ventures and Lowe Property Group redevelopment in the Granary District that was completed in 2024. Blaser is also scheduled to open Pickle & Hide this summer, while other nearby projects have brought new restaurant names into the neighborhood as well.
